Pear Butter with Cardamom and Ginger

Four cups of coarsely chopped peeled Bartlett pear
One cup sugar
Two teaspoons minced peeled fresh ginger
Two teaspoons fresh lemon juice
1/4 teaspoon salt
One teaspoon ground cardamom

Put the pears in a food processor or in a blender; process it until it becomes smooth. Combine the sugar, pear puree, and all remaining ingredients in a pan over medium heat; bring to a simmer, stirring it occasionally. Cook it for at least 3 hours or until mixture is become thick.
